Mrs. King's Irresistibles (Makes about 3 dozen big cookies)
1 1/2 c. walnut halves
1 1/2 c. unsweetened granola
1 c. old-fashioned rolled oats
1 c. chocolate chips
1 2/3 c. all purpose flour
1 t. baking soda
1 t. baking powder
1/2 t. salt
1 c. dark brown sugar
3/4 c. sugar
1 c. butter, soft
2 eggs
1 t. vanilla
Roast walnuts at 375 for about 10 minutes, stirring once. Cool and chop coarsely.
Cream butter and sugars.
Add egg and vanilla and mix well.
Mix all dry powdery ingredients and add to combine.
Stir in remaining ingredients (the chunky stuff-my kitchen aid can handle this step).
Shape into 1 3/4 inch diameter balls and place 2 inches apart on ungreased cookie sheets.
Bake for 12-14 minutes or until the tops are turning light brown. (It's better to under-bake than to over-bake)
I have a note to myself that sweetened granola works if you substitute 8 ounces light brown sugar for both the white and dark sugar.
